Holy cow, it's been over three months since I last put something up.
Rearranging the thing to be more "in the Unity way" - and hopefully save some RAM or disk space SEEMED like a good idea at the time. It was involved, and at times warranted re-thinking what would happen in which stage.
I'm tempted to say that my process is organic: come up with an idea, test the core concept, get it working, then add on. It's not exactly Agile or Scrum - or even "How to Change Cars Forever" (that Dodge Dart commercial with "call in the nerds"), but it works for me. To borrow from the peeps at Philadelphia Game Mechanics, ideally, one should have fun with making a viable game program.
